book is informative,educational and necessary for chef/restauranteur. helps to identify & GRADE: Produce, Meats/Poultry/Fish et al elements to keep your costs inline.NOW there are programs,significantly simple to use, but expensive.and most in the BIZ want to improve entrepreneurial skills not the old day to day prerequisites. but this still is a good reference [and telling one] useful to those interested in REAL FOOD or SLOW Food operations or creating whole menus without waste or processed food.
